Buscamos un(a) profesional con visión estratégica y experiencia comprobable en el desarrollo de conceptos restauranteros, capaz de liderar proyectos desde la planeación hasta la apertura y consolidación de nuevas unidades de negocio.

Esta posición está dirigida a personas que hayan participado activamente en la creación de restaurantes desde cero, con experiencia preferente en taquerías, comida mexicana o conceptos casuales, combinando creatividad, análisis financiero y liderazgo operativo.

Objetivo del puesto

Diseñar, desarrollar e implementar nuevos conceptos gastronómicos, asegurando que cada proyecto cuente con una propuesta de valor competitiva, procesos eficientes y una operación rentable que garantice una experiencia sobresaliente para los clientes.

Principales funciones Desarrollo del concepto
  • Diseñar propuestas gastronómicas innovadoras alineadas con la visión y objetivos del negocio.
  • Definir la identidad del concepto, experiencia del cliente y estrategia operativa.
  • Participar en la creación e integración de menús junto con el Chef Ejecutivo, considerando rentabilidad y diferenciación.
Gestión de proyectos
  • Planear y coordinar todas las etapas necesarias para la apertura de nuevos restaurantes.
  • Dar seguimiento a cronogramas, presupuestos y cumplimiento de objetivos.
  • Coordinar la participación de proveedores, arquitectos, diseñadores y contratistas para asegurar el avance del proyecto.
Desarrollo operativo
  • Diseñar procedimientos, manuales operativos y estándares de servicio.
  • Implementar modelos de operación eficientes que permitan la correcta ejecución del concepto.
  • Supervisar la puesta en marcha de cada unidad hasta alcanzar estabilidad operativa.
Planeación estratégica
  • Administrar presupuestos de inversión y controlar recursos durante el desarrollo de cada proyecto.
  • Analizar indicadores de desempeño, productividad y rentabilidad para proponer mejoras.
  • Identificar oportunidades de expansión, innovación y fortalecimiento de las marcas del grupo.
Coordinación interdepartamental
  • Trabajar de manera conjunta con las áreas de Operaciones, Finanzas, Marketing y Recursos Humanos para garantizar la correcta ejecución de cada proyecto.
  • Asegurar el cumplimiento de las disposiciones legales, sanitarias y de seguridad aplicables al sector restaurantero.
Perfil Escolaridad
  • Licenciatura en Gastronomía, Administración, Ingeniería Industrial, Negocios o carrera afín.
Experiencia
  • Mínimo 5 años desarrollando y lanzando nuevos conceptos gastronómicos.
  • Participación comprobable en la apertura integral de restaurantes, desde la planeación hasta el inicio de operaciones.
  • Experiencia en taquerías, restaurantes de comida casual o conceptos gastronómicos especializados.
  • Conocimientos sólidos en ingeniería de menú, costeo, administración financiera y control de presupuestos.

+ Experience in leading manual operations at a large scale
+ Knowledge of Med Device products is preferred, but knowledge of FDA regulations and highly regulated environment is a plus

+ Experience in line transfers for highly regulated environments
+ Experience in Training large organizations and achieve ramp ups
+ Experience conducting self-inspections in a GMP context based in FDA requirements, COFEPRIS, EMA requirements

+ Knowledge of financial statements, experience in planning, budgeting, forecasting
+ Manage scrap processes and product cost glidepaths

**Job Description**
**Job Responsibilities: (Primary Duties, Roles, and/or Authorities)**
**(Supporting the department in different business related tasks).**
 Project planning.
 Project group forming.
 Coordination of follow-up and project progress meetings.
 Elaboration of Raw material specifications, subassembly, inspection , and end item, in coordination with the involved disciplines.
 Responsible for recommending the important characteristics (dimensions, tests, etc.) for the product performance.
 Among his/her activities it stands out the recommendation of inspection methods,
measurement, and testing to evaluate the product correctly.
 Capable to have direct communication with molding suppliers, resin distributors, extrusion suppliers, etc.
 Analyze technical data information of the proposed materials.
 Develop tooling for risk evaluation such as FMEA to determine risks and recommend actions to control or minimize them.
 Project plans (Gantt chart).
 Monthly reports of project progress (CRs), and PMPs.
 Compliance reports and project progress.
 Process capability analysis, (CP, Cpk), cost savings calculation (CIP).
 Coordinate tests with Division laboratories and sterilization tests.
 Visual and physical tests coordination in the metrology lab.
 Production runs coordination for engineering samples or qualification tests (per Protocol and/or PQR).
 Evaluations of materials to be obsolete or scrap and coordinate good incorporation of the materials under change.
 Develop Qualification Protocols and Summaries with objective evidence of the qualification results.
 Coordination with technician personnel of the Plant and Division for clarification of qualification requirements.
 Develop a memorandum of progress about qualifications to suppliers and notifications about
the progress of the project and the identified obstacles to Management.
 Participate in Continuous Improvement Projects (Lean, Six Sigma).
**Education and Experience:**
 Engineering Finished preferably.
 2 Years of experience in manufacturing processes preferably.
 2 Years of experience in Quality Systems preferably.
**Language Skills:** Upper Intermediate
